Domaine des Feux Follets: a unique terroir
It is about thirty minutes from Quebec City, in Berthier-sur-Mer, that Sarah Inkman and Frédéric Paré settled in 2015 to create the Domaine des Feux Follets, after having acquired the dairy farm that Frédéric’s great-grandfather had himself bought 100 years earlier. The farm turned into a vineyard and wine replaced milk! The couple now cultivates, on the three hectares of the estate, hybrid grape varieties, more resistant to the harsh winters of the region, such as the Petite Perle, the Radisson, the Frontenac Gris or the Adalmiina. These grapes, certified organic, are then processed in the most natural way possible and aged in sandstone amphorae or stainless steel vats, where the aromas develop. The wines of Domaine des Feux Follets reflect the terroir from which they come, a region along the St. Lawrence River with a unique microclimate.
